Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces and season with a pinch of salt and pepper. Cook, stirring occasionally, until the chicken is browned on all sides and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set it aside.
Cook the Vegetables:

In the same skillet, add the remaining tablespoon of oil. Add the green beans, onion, and bell pepper (if using). Stir fry for about 3-4 minutes, or until the vegetables are tender but still crisp. Add the garlic and cook for another 1-2 minutes until fragrant.
Make the Stir Fry Sauce:

In a small bowl, combine the soy sauce, oyster sauce, hoisin sauce (if using), rice vinegar, and sesame oil. Stir well to combine.
Pour the sauce into the skillet with the vegetables and stir to coat everything evenly.
Combine Chicken and Sauce:

Add the cooked chicken back into the skillet with the vegetables. Stir everything together, making sure the chicken and vegetables are coated in the sauce. If you'd like a thicker sauce, add the cornstarch mixture and cook for another 1-2 minutes until the sauce has thickened.
Serve:

Once everything is cooked and well combined, taste and adjust the seasoning with salt and pepper if needed. Serve the stir fry hot, garnished with sesame seeds and sliced green onions, if desired.
