In a large skillet, cook the chopped bacon over medium heat until it becomes crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Reserve a bit of the bacon drippings in the skillet.
Sauté the Onion:
In the same skillet, add the finely chopped onion to the bacon drippings and sauté for 3-4 minutes, or until the onion becomes soft and translucent.
Prepare the Baked Beans Sauce:
In a mixing bowl, combine the brown sugar, ketchup, mustard, apple cider vinegar, Worcestershire sauce, smoked paprika (if using), and a pinch of salt and pepper. Stir well until the ingredients are fully combined and the brown sugar is dissolved.
Combine the Beans and Bacon:
Add the cooked beans to the skillet with the sautéed onions. Pour the prepared sauce over the beans and mix everything together. Stir in the crispy bacon.
Bake the Beans:
Preheat your oven to 350°F (175°C). Transfer the bean mixture to a baking dish and spread it out evenly. Cover the dish with foil and bake for 30-35 minutes. For a more caramelized top, remove the foil during the last 10 minutes of baking.
Serve and Enjoy:
Once the beans are baked, remove them from the oven and let them cool slightly before serving. They can be served as a side dish to grilled meats, BBQ, or enjoyed on their own as a hearty snack.
