Line a baking sheet or tray with parchment paper or wax paper for easy removal.
Scoop the vanilla ice cream into a bowl and soften it slightly by leaving it out for 5-10 minutes.
If you want to mix in graham crackers or chocolate chips, stir them into the softened ice cream until evenly distributed.
Scoop the ice cream into individual bar molds or form rectangular shapes using your hands. You can also use popsicle sticks inserted into the center of each bar for easy handling.
Place the bars on the prepared tray, and freeze them for at least 2 hours, or until fully firm.
Step 2: Prepare the Chocolate Coating
In a microwave-safe bowl, combine the semi-sweet chocolate and coconut oil.
Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth. Be careful not to overheat.
Allow the melted chocolate to cool slightly, just enough so it doesn’t melt the ice cream when dipping.
Step 3: Coat the Ice Cream Bars
Remove the ice cream bars from the freezer and quickly dip each one into the melted chocolate, ensuring they are completely covered.
For a thicker coating, dip the bars twice, allowing the first layer to set for a few minutes in the freezer before adding the second layer of chocolate.
If you like, sprinkle chopped nuts, candy, or sea salt on top immediately after dipping.
Step 4: Freeze Again
Once all the bars are coated, place them back on the tray and return them to the freezer for an additional 30 minutes to 1 hour, or until the chocolate is firm.
Step 5: Serve
Once the chocolate is set, remove the bars from the freezer and serve immediately, or store them in an airtight container for later enjoyment.
