Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or lightly grease it.
In a large bowl, combine the oats, cinnamon, salt, and baking soda.
In a separate bowl, whisk together the applesauce, maple syrup (or honey), melted coconut oil, vanilla extract, and eggs until smooth.
Add the wet ingredients to the dry ingredients and stir to combine. Fold in the diced apples and raisins, making sure everything is evenly distributed.
Pour the mixture into the prepared baking pan and spread it out into an even layer.
Bake for 25-30 minutes, or until the bars are golden brown and a toothpick inserted into the center comes out clean.
Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Once cooled, slice into squares.
