Creamy South African Milk Tart: A Timeless Dessert

Preheat your oven to 350°F (180°C).
In a mixing bowl, combine the flour and powdered sugar. Add the butter and rub it in until the mixture resembles fine breadcrumbs.
Add the egg yolk and mix, adding cold water one tablespoon at a time until a dough forms.
Press the dough into a 9-inch tart pan, ensuring it’s even across the bottom and up the sides. Prick the base with a fork.
Bake the crust for 15 minutes, or until lightly golden. Set aside to cool.
Step 2: Make the Filling

In a medium saucepan, heat the milk over medium heat until just below boiling.
In a separate bowl, whisk together the sugar, cornstarch, flour, salt, and eggs until smooth.
Gradually add the hot milk to the egg mixture, whisking constantly to temper the eggs.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
Remove from heat and stir in the vanilla extract and butter until smooth.
Step 3: Assemble and Chill

Pour the custard filling into the prepared crust, smoothing the top.
Allow the tart to cool to room temperature, then refrigerate for at least 2 hours to set.
Step 4: Finish with Cinnamon

Before serving, dust the top of the tart generously with ground cinnamon.
