Heat 1 tablespoon of oil or ghee in a large skillet over medium-high heat. Add the chicken pieces and sear until lightly browned on all sides. Remove and set aside.
Step 2: Sauté the Aromatics
In the same skillet, add the remaining oil. Sauté the onions until golden brown, about 5 minutes. Add garlic and ginger, and cook for another minute until fragrant.
Step 3: Build the Curry Base
Stir in the curry powder, turmeric, cumin, and cinnamon (if using). Cook for 1-2 minutes to toast the spices and release their aroma.
Step 4: Add Liquids and Simmer
Add the diced tomatoes, coconut milk (or cream), chicken broth, and sugar. Stir well to combine and bring the mixture to a simmer.
Step 5: Cook the Chicken
Return the seared chicken to the skillet. Reduce the heat to low, cover, and let the curry simmer for 20-25 minutes until the chicken is tender and the sauce has thickened.
Step 6: Season and Garnish
Taste and adjust the seasoning with salt and pepper. Garnish with fresh cilantro leaves before serving.
