In a medium saucepan, bring the water (or milk) to a boil.
Add a pinch of salt and stir in the rolled oats.
Reduce the heat to low and let the oats simmer for about 5-7 minutes, stirring occasionally, until they are tender and the liquid is absorbed.
If you prefer your oatmeal creamier, add more milk during cooking. Stir in the cinnamon and sweetener (honey or maple syrup) if desired. Once the oatmeal is cooked to your liking, remove from heat and set aside.
2. Prepare the Cinnamon Apples:
While the oatmeal is cooking, heat the butter or coconut oil in a skillet over medium heat.
Add the diced apples to the skillet and cook for about 5 minutes, stirring occasionally, until they begin to soften.
Sprinkle the apples with ground cinnamon and drizzle in the honey or maple syrup, if using. Stir to coat the apples evenly in the spices and syrup.
Cook for an additional 3-5 minutes until the apples are tender but still hold their shape. Add vanilla extract for extra flavor if desired.
3. Serve the Oatmeal and Apples:
Spoon the oatmeal into bowls and top with the cinnamon apples. You can also drizzle any extra juices from the skillet over the oatmeal for added flavor.
