Place the chopped apples into a large pot or slow cooker. Add the apple cider or juice and bring to a simmer over medium heat.
Cover and cook for 20-30 minutes, stirring occasionally, until the apples have softened. You can also use a slow cooker and cook on low for 3-4 hours.
2. Puree the Apples:
Once the apples have softened, use an immersion blender directly in the pot to puree the apples until smooth. Alternatively, you can transfer the cooked apples in batches to a blender or food processor and blend until smooth.
3. Add Sugar and Spices:
Stir in both the granulated sugar and brown sugar, then add the cinnamon, cloves, nutmeg, and lemon juice if using.
Return the mixture to the heat (on low to medium-low) and cook, uncovered, for 1-2 hours, stirring occasionally. Keep cooking until the apple butter thickens and darkens in color. Stir occasionally to prevent burning, and keep an eye on the consistency.
4. Final Touches:
Once the apple butter has thickened to your liking, remove from heat and stir in vanilla extract if desired. Taste and adjust the seasoning, adding more cinnamon, sugar, or lemon juice if needed.
5. Store:
Let the apple butter cool completely. Transfer to jars or airtight containers. Store in the refrigerator for up to 2-3 weeks. For longer storage, you can can the apple butter in sterilized jars following proper canning procedures.
