Beef and Cheese Manicotti: A Comforting Italian Classic

Preheat the oven to 375°F (190°C). Cook the manicotti pasta shells according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Prepare the Beef Filling:
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes. Add the ground beef, breaking it up with a spoon, and cook until browned and cooked through. Season with salt, pepper, basil, and oregano. Drain excess fat if needed and set aside to cool slightly.

Make the Cheese Filling:
In a large bowl, combine the ricotta, shredded mozzarella, grated Parmesan, egg, and a pinch of salt and pepper. Add the cooked beef mixture and stir until everything is well combined.

Stuff the Manicotti:
Using a spoon or piping bag, carefully stuff each manicotti shell with the beef and cheese mixture. Be generous with the filling!

Prepare the Sauce:
In a small saucepan, heat marinara sauce over medium heat. Stir in dried basil, garlic powder, salt, and pepper. Let it simmer for 5-7 minutes to blend the flavors.

Assemble the Dish:
Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Arrange the stuffed manicotti shells in the dish. Pour the remaining marinara sauce over the stuffed shells, ensuring they are fully covered.

Bake and Serve:
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil, sprinkle the shredded mozzarella over the top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve:
Let the manicotti rest for 5 minutes before serving. Garnish with fresh basil or additional Parmesan cheese if desired.
