Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or non-stick spray, or line it with parchment paper for easy removal.
Step 2: Mix Wet Ingredients
In a large bowl, mash the ripe bananas with a fork or potato masher until smooth but still slightly chunky.
Stir in the melted butter, sugar, eggs, and vanilla extract until well combined.
Add the sour cream (or Greek yogurt) and mix until the batter is smooth.
Step 3: Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.
If you’re adding nuts or chocolate chips, fold them into the batter now.
Step 5: Bake the Banana Bread
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
If the top begins to brown too quickly, cover the loaf loosely with aluminum foil and continue baking.
Step 6: Cool and Serve
Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
