In a large mixing bowl, combine the flour, salt, and instant yeast.
Add the warm water and honey (or maple syrup), stirring until the dough starts to come together.
Drizzle in the olive oil and mix until the dough is sticky and well combined.
Step 2: Add the Seeds
Stir in the sunflower seeds, pumpkin seeds, flaxseeds, sesame seeds, and chia seeds (if using). The dough will be chunky and sticky, but that’s perfectly fine.
Step 3: Let the Dough Rise
Cover the bowl with a clean kitchen towel or plastic wrap. Let the dough rise at room temperature for 1 to 1 1/2 hours, or until it has doubled in size.
Step 4: Shape the Dough
Once the dough has risen, turn it out onto a lightly floured surface. Gently shape it into a rough ball or oval shape, depending on your preference.
Place the dough on a baking sheet lined with parchment paper, or in a lightly greased loaf pan if you prefer a loaf shape.
Step 5: Final Rise and Bake
Preheat your oven to 425°F (220°C).
Let the dough rise again for about 30 minutes while the oven heats up.
Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. If you’re using a loaf pan, bake for 35-40 minutes.
Step 6: Cool and Serve
Allow the bread to cool on a wire rack for at least 20 minutes before slicing.
