Preheat your oven to 325°F (163°C).
In a medium bowl, combine the graham cracker crumbs, sugar, and cinnamon. Add the melted butter and stir until the mixture is evenly combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
Bake for 10 minutes, then remove from the oven and let it cool while you prepare the cheesecake filling.
Step 2: Make the cheesecake filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the granulated sugar, vanilla extract, cinnamon, nutmeg, and cloves. Mix until well combined.
Add the flour and mix again to incorporate.
Add the eggs one at a time, mixing well after each addition, followed by the sour cream.
Pour the cheesecake batter onto the cooled crust in the springform pan.
Step 3: Bake the cheesecake
Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly.
Turn off the oven, crack the oven door, and let the cheesecake cool for 1 hour inside. This helps prevent cracking.
After an hour, remove the cheesecake from the oven and let it cool completely at room temperature.
Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set.
Step 4: Make the spiced whipped cream
In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, cinnamon, nutmeg, and vanilla extract until soft peaks form.
Top the chilled cheesecake with the spiced whipped cream just before serving.
Step 5: Garnish and Serve
Garnish with crushed gingerbread cookies or cinnamon sticks for an extra festive touch.
Slice, serve, and enjoy the holiday flavors in every bite!
