In a medium saucepan, melt the butter over medium heat.
Add the sliced apples, brown sugar, cinnamon, and lemon juice. Stir to coat the apples in the sugar and spices.
Cook for 5-7 minutes, stirring occasionally, until the apples are softened but still hold their shape. Remove from heat and set aside to cool slightly.
Step 2: Prepare the Pinwheels
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface. Using a rolling pin, roll it out slightly to smooth out any creases.
Evenly spread the apple mixture across the center of the puff pastry sheet, leaving about a 1-inch border on all sides.
Step 3: Roll and Slice
Starting from one edge of the pastry, carefully roll the pastry into a tight log.
Slice the rolled pastry into 1-inch wide pinwheels. You should get about 8-10 slices, depending on the size of your puff pastry sheet.
Step 4: Bake the Pinwheels
Arrange the pinwheels on the prepared baking sheet, making sure they are spaced a little apart.
Beat the egg and brush it over the tops of each pinwheel for a golden, shiny finish.
Sprinkle a little granulated sugar over the top of each pinwheel, if desired, for added sweetness and crunch.
Bake in the preheated oven for 15-18 minutes, or until the pinwheels are golden and puffed up.
Step 5: Serve and Enjoy
Let the pinwheels cool slightly before serving. Enjoy them warm or at room temperature.
