Blackberry Thyme Baked Brie En Croute: A Savory and Sweet Elegance

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
Prepare the Brie:

Place the brie wheel in the center of the puff pastry sheet. If desired, you can remove the rind from the brie, though it's optional. The rind adds flavor and texture, so you may want to leave it on.
Prepare the Blackberry and Thyme Filling:

In a small bowl, combine the fresh blackberries, thyme leaves, and honey. Gently mash the blackberries with a fork, leaving some larger pieces for texture. Season with a pinch of salt and pepper to taste.
Assemble the En Croute:

Spoon the blackberry-thyme mixture over the top of the brie. Fold the puff pastry over the brie, folding in the edges so that the cheese is completely wrapped inside the pastry. If needed, trim the edges of the pastry to ensure it wraps neatly.
Brush with Egg Wash:

Brush the wrapped pastry with the beaten egg to give it a golden, glossy finish when baked.
Bake the Brie:

Place the wrapped brie on the prepared baking sheet and bake for 20-25 minutes, or until the pastry is golden brown and crispy. The brie should be soft and melty inside.
Serve:

Remove the brie from the oven and let it cool for a few minutes before serving. Drizzle with extra honey and garnish with fresh thyme sprigs for an extra touch of elegance.
