Mash the boiled potatoes in a large bowl until smooth.
Add the shredded cheese, chopped parsley, egg yolk, salt, and pepper to the mashed potatoes. Mix well until the ingredients are fully combined.
Shape the Croquettes:
Take a small portion of the potato mixture (about 2 tablespoons) and roll it into a ball or form it into an oval shape. Repeat with the remaining mixture and place the croquettes on a baking tray.
Bread the Croquettes:
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
Roll each croquette in the flour, dip it in the beaten eggs, and then coat it thoroughly with breadcrumbs. Place the breaded croquettes back on the tray.
Fry the Croquettes:
Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). Test the oil by dropping in a breadcrumb; if it sizzles and turns golden, the oil is ready.
Fry the croquettes in batches, avoiding overcrowding, for 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
