In a bowl, whisk the eggs with a pinch of salt and pepper.
Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
Pour in the eggs and cook, stirring occasionally, until scrambled and fully cooked, about 2-3 minutes. Remove from heat and set aside.
Assemble the Quesadillas:
Lay both tortillas flat on a clean surface.
On one tortilla, sprinkle half of the shredded cheese, then add half of the scrambled eggs. Add your cooked bacon (or preferred meat/veggies) and any additional ingredients like bell peppers or onions. Top with the remaining cheese.
Place the second tortilla on top to close the quesadilla.
Cook the Quesadillas:
Heat a large skillet or griddle over medium heat and add a little butter or oil to coat the surface.
Carefully place the quesadilla in the skillet and cook for 2-3 minutes on each side, until the tortillas are golden brown and crispy and the cheese has melted inside. You can use a spatula to gently press down on the quesadilla for an even crisp.
Serve:
Once the quesadilla is crispy and the cheese is melted, remove it from the skillet. Let it cool for a minute before slicing it into wedges.
Serve with your favorite toppings, such as salsa, sour cream, or guacamole.
