In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
Prepare the Wet Ingredients:
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and gently stir with a spoon or spatula until just combined. The batter should be slightly lumpy—avoid overmixing to keep the pancakes light and fluffy.
Cook the Pancakes:
Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until small bubbles form on the surface and the edges start to look set. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.
Serve:
Remove the pancakes from the skillet and serve immediately with your favorite toppings such as maple syrup, fresh berries, whipped cream, or a dusting of powdered sugar.
