Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups lightly.
Mix the Dry Ingredients:
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until evenly distributed.
Prepare the Wet Ingredients:
In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the bowl with the dry ingredients. Gently mix until just combined. Avoid overmixing; a few lumps are okay and will help keep the muffins tender.
Add the Chocolate Chips:
Fold in the chocolate chips, reserving a few to sprinkle on top of each muffin.
Fill the Muffin Cups:
Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Sprinkle the reserved chocolate chips and coarse sugar (if using) on top of the batter.
Bake:
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. The tops should be golden brown.
Cool and Serve:
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
