In a large bowl, combine the finely chopped pecans, graham cracker crumbs, and brown sugar. Stir until well mixed.
Add Wet Ingredients:
In a separate small bowl, melt the butter and add the corn syrup, vanilla extract, and a pinch of salt. Mix well until everything is evenly combined.
Combine the Mixtures:
Pour the wet mixture into the dry ingredients and stir until fully incorporated. The mixture should be sticky but easy to roll into balls. If it feels too dry, add a bit more corn syrup or melted butter.
Form the Balls:
Use your hands to roll the mixture into small, bite-sized balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Coat with Powdered Sugar:
Once all the balls are formed, roll each one in powdered sugar to coat. This adds a nice sweetness and makes them look festive!
Chill and Serve:
Place the pecan pie balls in the refrigerator for at least 30 minutes to firm up. Once chilled, they are ready to serve!
