Thinly slice the beef against the grain. If necessary, freeze the beef for about 30 minutes to make slicing easier.
Cook the Asparagus:
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the asparagus pieces and stir-fry for 3–4 minutes, until they’re bright green and tender-crisp. Remove from the pan and set aside.
Cook the Beef:
In the same skillet, add another tablespoon of oil. Add the sliced beef and cook for 2–3 minutes, stirring frequently, until browned and cooked through.
Add Garlic and Sauce:
Add the minced garlic to the beef and cook for an additional 30 seconds, until fragrant. Stir in the soy sauce, oyster sauce, honey, and black pepper. If you like some heat, add red pepper flakes at this stage.
Combine Beef and Asparagus:
Return the cooked asparagus to the skillet with the beef. Stir everything together to coat in the sauce. If you prefer a thicker sauce, mix the cornstarch and water in a small bowl, then stir it into the stir-fry. Cook for another 1–2 minutes, allowing the sauce to thicken and the flavors to combine.
Serve:
Garnish with sesame seeds, cilantro, or green onions, if desired. Serve the stir-fry over steamed rice or noodles for a complete meal.
