Lightly grease a silicone mold or a baking dish. If using a baking dish, you can line it with parchment paper for easy removal of the gumdrops.
Make the Fruit Gelatin Mixture:

In a medium saucepan, pour the fruit juice and sprinkle the gelatin powder over it. Let it sit for 5 minutes to bloom, allowing the gelatin to absorb the liquid.
After the gelatin has bloomed, place the saucepan over medium heat and stir until the gelatin has dissolved completely. This should take about 2-3 minutes.
Add the sugar to the mixture and stir until it's dissolved. If you’re using lemon juice, citric acid, or vanilla extract, add them now. Continue heating for another 1-2 minutes.
Pour the Mixture into Molds:

Carefully pour the fruit gelatin mixture into your prepared molds, filling each one completely. If you’re using a baking dish, pour the mixture in and smooth it into an even layer.
Chill the Gumdrops:

Allow the gumdrops to cool at room temperature for a few minutes, then refrigerate for at least 3-4 hours, or until they are fully set and firm to the touch.
Cut and Coat the Gumdrops:

Once set, remove the gumdrops from the molds. If you used a baking dish, cut the gelatin into small cubes.
Toss the gumdrops in cornstarch to prevent them from sticking together. You can also dust them with a little extra sugar for an added sweetness.
Serve and Enjoy:

Your homemade fruity gumdrops are ready to be enjoyed! Serve them in a dish, or package them up in a cute jar to share with friends and family.
