Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Combine Wet Ingredients:
In a large bowl, whisk together the Greek yogurt, sugar, and eggs until smooth and well combined. Add the oil (or melted butter) and vanilla extract, mixing until incorporated. If using, add the lemon zest for a fresh citrus flavor.
Add Dry Ingredients to Wet:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the cake dense.
Add Milk:
Slowly pour in the milk and stir gently until the batter is smooth and creamy.
Bake the Cake:
Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, you can dust with powdered sugar or top with fresh berries if desired.
