In a large bowl, combine the shredded chicken, crumbled bacon, chopped chives, cream cheese, cheddar cheese, Dijon mustard, salt, and pepper. Mix until everything is well combined and creamy.
Prepare the Bread:
Preheat your oven to 375°F (190°C). If the bread loaf is unsliced, use a serrated knife to carefully hollow out the center of the loaf, leaving a thick border around the edges. Set aside the removed bread for serving or use for breadcrumbs.
Brush the inside of the bread loaf with melted butter.
Stuff the Loaf:
Stuff the hollowed-out bread loaf with the chicken, bacon, and chive mixture. Press the filling down gently to pack it in.
Bake the Stuffed Loaf:
Place the stuffed loaf on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the bread is golden and crispy on the outside and the filling is warm and melted.
If desired, sprinkle the top of the loaf with grated Parmesan cheese during the last 5 minutes of baking for a golden, cheesy finish.
Serve:
Remove the loaf from the oven and let it rest for a few minutes. Slice into thick wedges and serve warm. This stuffed loaf pairs wonderfully with a side of fresh salad or roasted vegetables.
