In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until well combined but not overworked.
Shape the mixture into 4 equal oval-shaped patties.
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the patties and cook for 3-4 minutes per side, until browned. Remove the patties from the skillet and set aside.
Make the Garlic Mashed Potatoes:

Place the cubed potatoes and garlic cloves in a large pot and cover with water. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.
Drain the potatoes and garlic, then return them to the pot. Add the butter and begin mashing. Slowly add milk until the potatoes reach your desired consistency. Season with salt and pepper to taste.
Prepare the Mushroom & Onion Gravy:

In the same skillet used for the patties, add the olive oil over medium heat. Add the sliced onion and cook for 3-4 minutes until softened.
Add the sliced mushrooms and cook for an additional 4-5 minutes until the mushrooms release their moisture and become golden brown.
Stir in the flour and cook for 1 minute to form a roux.
Slowly add the beef broth and Worcestershire sauce, stirring constantly to avoid lumps. Bring to a simmer and cook for about 5 minutes, until the gravy thickens.
Season with salt and pepper to taste.
Combine and Serve:

Return the Salisbury steaks to the skillet with the gravy and cook for an additional 3-4 minutes to heat through and allow the flavors to meld.
Serve the Salisbury steaks over a bed of creamy garlic mashed potatoes, topped with the mushroom and onion gravy. Garnish with fresh parsley.
