Preheat your oven to 425°F (220°C).
Toss the cut fries in olive oil, salt, pepper, garlic powder, and paprika. Spread them out in a single layer on a baking sheet.
Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy. Remove from the oven and set aside.
Cook the Philly Steak Topping:
While the fries are baking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the thinly sliced steak and cook for 2-3 minutes until browned and just cooked through. Season with salt and pepper to taste. Remove the steak from the skillet and set aside.
In the same skillet, add the sliced onion and bell pepper (if using). Sauté for 5-7 minutes until softened and slightly caramelized. Add the minced garlic and cook for another 1 minute until fragrant.
Stir in the Worcestershire sauce and return the steak to the skillet. Mix everything together, then remove from heat.
Assemble the Philly Steak Cheese Fries:
Arrange the baked fries on a serving platter or individual plates.
Spoon the Philly steak mixture over the fries, ensuring they’re generously covered with steak, onions, and peppers.
Sprinkle the shredded provolone cheese over the top of the steak mixture.
Place the fries under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with fresh parsley if desired, and serve immediately while hot and cheesy.
