In a microwave-safe bowl (about 200ml in size), combine the applesauce, oil (or melted butter), sugar, egg, and vanilla extract. Stir until well combined.
Add Dry Ingredients:
To the wet mixture, add cinnamon, baking powder, baking soda, salt, and flour. Stir until smooth and no lumps remain. If you want a chunkier texture, fold in some chopped apple pieces.
Microwave the Cake:
Microwave the mixture on high for 2 minutes. After 2 minutes, check the cake with a toothpick. If it comes out clean, the cake is ready. If not, microwave in 20-second intervals until fully cooked.
Cool and Serve:
Allow the cake to cool for a few minutes before serving. For extra flavor, sprinkle with powdered sugar or add a dollop of whipped cream.
