Try Beet and Milk Soup

  1. Two big beets, chopped and peeled
  2. Four cups of milk (you may use whole, skim, or even plant-based milk like almond milk if you like)
  3. Add salt to taste.
  4. Optional: For extra taste, add a pinch of cinnamon or nutmeg.

Get the beets ready:

  • Peel and finely chop the beets first. Grate them to ensure they cook rapidly and to help unleash their flavors more fully.

Prepare the Beets:

  • Add the grated beets and just enough water to cover them to a medium saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the beets are soft.
