Spiced Gingerbread Cake with Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (or more for desired consistency)
  • Pinch of salt

Instructions :

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C. Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-5 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Then mix in the molasses, buttermilk, orange zest, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
