  • 2 pounds of beef sirloin or tenderloin, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

For the Mushroom Gravy:

  • 8 ounces of cremini or button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Preparing the Beef Tips

  1. Seasoning the Beef: In a large mixing bowl, combine the beef cubes with salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary. Toss the beef until well-coated with the spices.
  2. Searing the Beef: Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat. Once hot, add the seasoned beef tips in a single layer, ensuring not to overcrowd the pan. Sear the beef for about 3-4 minutes on each side until a deep brown crust forms. This step is crucial for developing rich flavors. Remove the beef from the skillet and set it aside.
