The first step in creating a flavorful base for your soup is sautéing the onion and garlic.
In a large soup pot or Dutch oven, heat the olive oil over medium heat.
Add the diced onion and sauté for 4-5 minutes, or until the onion becomes soft and translucent.
Stir in the minced garlic and cook for another 1-2 minutes, being careful not to burn the garlic.

Step 2: Add the Broth and Tomatoes

Step 3: Add the Tortellini and Spinach
Now it’s time to cook the tortellini and add some healthy greens to the soup.
Once the broth is simmering, add the tortellini to the pot. If you’re using fresh tortellini, it should cook in about 4-5 minutes. If using frozen tortellini, follow the package instructions for cooking time.
After the tortellini has been cooking for a couple of minutes, stir in the chopped spinach. The spinach will wilt quickly in the hot broth, adding color and nutrition to the soup.
Spinach is a great addition to tortellini soup because it provides a boost of vitamins and minerals without overpowering the other flavors.
