Cheesy Potato Patties

Boil the Potatoes:
Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and mash them until smooth. Let them cool slightly.
Prepare the Potato Mixture:
In a large mixing bowl, combine the mashed potatoes with grated Parmesan cheese, green onions, parsley, garlic powder, onion powder, salt, and pepper.
Mix until all ingredients are well incorporated.
Form the Patties:
Take a small handful of the potato mixture and flatten it into a patty in your palm.
Place a small amount of shredded mozzarella cheese in the center of the patty.
Carefully fold the potato mixture around the cheese, forming a ball, and then flatten it into a patty. Repeat with the remaining mixture.
Bread the Patties:
Dredge each patty lightly in flour, then dip into the beaten egg, and finally coat with breadcrumbs.
Fry the Patties:
Heat vegetable oil in a large skillet over medium heat.
Fry the patties in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
Remove and drain on paper towels.
Serve:
Serve the cheesy potato patties hot, with a side of sour cream, ketchup, or your favorite dipping sauce.
Notes:
For a healthier version, you can bake the patties in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until they are golden and crispy.
You can add extra flavors to the potato mixture, like chopped cooked bacon or herbs like thyme or rosemary.
