Herb Butter Sauced Golden-Seared Cod

Instructions:

  1. Pat the cod fillets dry with paper towels, then season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers but does not smoke.
  3. Gently place the fish fillets in the skillet and sear for about 4 minutes per side, or until the bottom is golden and crisp.
  4. Continue cooking for an additional 3 minutes, or until the fish flakes easily with a fork. Carefully turn the fish over with a spatula.
  5. Transfer the fish to a platter and cover with foil to keep warm.
  6. Lower the heat to medium in the same skillet. Cook, stirring occasionally, for about 1 minute, until the garlic is aromatic and the butter has melted.
  7. Remove the pan from the heat and stir in the chives, parsley, dill, and lemon juice.
  8. Top the warm cod fillets with the herb butter sauce and serve immediately.

Tips and Variations:

  • If cod isn’t available, halibut or tilapia are good substitutes.
  • Add lemon zest to the herb butter sauce for an extra burst of flavor.
