Shoepeg Casserole Recipe

Ingredients:
1 large celery stalk, chopped
1/2 yellow onion, chopped
1/2 red bell pepper, chopped
1/2 cup shredded cheddar cheese
11 oz can shoepeg corn, drained
14 oz can French cut green beans, drained
10.75 oz can condensed cream of celery soup
8 oz sour cream
Salt and pepper to taste
1 sleeve Ritz crackers, crushed
1/2 cup butter, melted
