Oatmeal Cake

Preheat oven to 350°F (175°C). Grease a 9x13-inch cake pan with nonstick spray and set aside.
Prepare the Oat Mixture:
2. In a bowl, combine the oats with boiling water. Let soak for 15 minutes.
Mix Dry Ingredients:
3. In another bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg.
Cream the Butter and Sugars:
4. In a large mixing bowl, beat the granulated sugar, brown sugar, and butter on medium speed until light and fluffy, about 4 to 5 minutes. Scrape the sides and bottom of the bowl as needed.
Add Eggs and Vanilla:
5. Beat in the eggs, one at a time, until well incorporated. Beat in the vanilla.
Combine Mixtures:
6. Gradually add the dry ingredients to the sugar-butter mixture until well combined. Add in the soaked oats, beating until well combined.
Bake:
7. Spread the batter evenly into the prepared baking pan and bake for 25 to 30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Prepare the Topping:
8. To make the topping, remove the cake from the oven and set the oven to broil.
9. In a medium bowl, whisk together the melted butter, light brown sugar, milk, and vanilla. Stir in the coconut and chopped nuts.
Broil:
10. Spread the topping mixture over the warm cake. Place under the broiler until the edges of the coconut start to brown, about 1 to 2 minutes.
Serve:
11. Allow the cake to cool for at least 30 minutes before serving.
