MOM’S FAMOUS CREAM PUFFS

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Make the Choux Pastry:
2. In a medium saucepan, bring the butter and water to a boil over medium heat.
3. Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.
4. Let the mixture cool slightly, then add the eggs one at a time, beating well after each addition until smooth and glossy.
Form the Puffs:
5. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
