1. *Prepare Ingredients*: Place the water, buttermilk, beaten egg, and melted butter in the bread machine pan. Add the flour, sugar, and salt. Make a small well in the dry ingredients and add the yeast.
2. *Mix and Knead*: Set the bread machine to the “dough” setting and let it run through the cycle.
*For Stand Mixer with Dough Hook, or by Hand:*
1. *Activate Yeast*: Put 6 tablespoons of lukewarm water in a cup and sprinkle the yeast on top. Let it sit for about 5 minutes until the yeast starts to react. Add a pinch of sugar to help activate it.
2. *Mix Ingredients*: In a bowl, combine the flour, sugar, and salt. Make a well in the center and add the buttermilk, beaten egg, melted butter, and yeast mixture.
3. *Knead the Dough*: Use the dough hook on a stand mixer and mix until a dough forms, then continue kneading for about 5 minutes. If kneading by hand, knead the dough for about 10 minutes until smooth and elastic.
4. *Rise*: Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1-2 hours until it has doubled in size.
*Both Bread Machine and Stand Mixer/Hand Instructions:*
1. *Prepare Doughnuts*: Once the dough has doubled in size, place it on a floured surface and knead it lightly. Divide the dough in half. Roll out one half to about 1/2-inch thick. Use a 3-inch round cookie cutter to cut out doughnuts and a 1-inch cutter for the holes.
2. *Second Rise*: Place each doughnut on a piece of parchment or waxed paper on a baking sheet. Place the baking sheet in a barely warm oven (preheat for 1 minute, then turn it off) with a jug of boiling water to create steam. Let the doughnuts rise until doubled in size.
