Creamy Beef Tips with Egg Noodles

In a large skillet, heat the olive oil over medium-high heat. Add the beef sirloin tips and cook until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent.
Sprinkle the flour over the onion and garlic mixture, stirring constantly to create a roux. Cook for about 2 minutes.
Gradually pour in the beef broth, whisking continuously to avoid lumps. Add the Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Bring the mixture to a simmer.
Reduce the heat to low and stir in the heavy cream. Allow the sauce to thicken for a few minutes.
Return the beef tips to the skillet and let them simmer in the sauce for an additional 10 minutes, or until the beef is tender.
While the beef is simmering, cook the egg noodles according to package instructions. Drain and set aside.
Serve the creamy beef tips over the egg noodles, garnished with fresh parsley.
