Savory Slow Cooker French Onion Meatballs

In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, dried parsley, salt, and black pepper. Mix until well combined. Form the mixture into 1-inch meatballs.
In a large skillet, melt the unsalted butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes.
Transfer the caramelized onions to the slow cooker. Add the beef broth, Worcestershire sauce, dried thyme, garlic powder, onion powder, and black pepper. Stir to combine.
Place the meatballs in the slow cooker, making sure they are submerged in the sauce.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are fully cooked and tender.
About 30 minutes before serving, sprinkle the shredded Gruyère or Swiss cheese over the meatballs. Cover and continue to cook until the cheese is melted and bubbly.
Garnish with chopped fresh parsley before serving.
