Classic Potato Salad Recipe

Cook the Potatoes:
Wash and peel the potatoes, then cut them into bite-sized cubes.
Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
Bring to a boil, then reduce the heat and simmer until the potatoes are just tender (about 10-15 minutes). Be careful not to overcook them.
Drain the potatoes and let them cool completely.
Prepare the Dressing:
In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Mix well.
