Chicken Scampi with Garlic Parmesan Rice

In a shallow dish, combine the flour, salt, and pepper. Dredge the chicken strips in the flour mixture, shaking off any excess.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until they are golden brown and cooked through, about 3-4 minutes per side. Transfer the cooked chicken to a plate and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.
Carefully pour in the chicken broth and white wine (or additional chicken broth). Bring the mixture to a simmer and cook for 3-4 minutes, allowing the sauce to reduce slightly.
Stir in the lemon juice and red pepper flakes (if using). Return the cooked chicken to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes, or until the chicken is heated through.
Remove the skillet from heat and stir in the chopped parsley.
Garlic Parmesan Rice:
Cook the rice according to the package instructions, using chicken broth instead of water for extra flavor.
While the rice is cooking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.
When the rice is fully cooked, fluff it with a fork and stir in the garlic butter and grated Parmesan cheese. Season with salt and pepper, to taste.
To serve, divide the Garlic Parmesan Rice among plates or bowls and top with the Chicken Scampi. Garnish with additional chopped parsley, if desired.
