1. In a large skillet, cook the hot Italian sausage over medium heat until browned. Break it up into small pieces as it cooks.
2. Remove excess grease from the skillet and lower the heat.
3. Add the cream cheese to the skillet and stir until melted and combined with the sausage.
4. Gradually pour in the beer while stirring; keep mixing until smooth.
5. Add the cheddar and pepper jack cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Stir until all the cheeses are melted and the mixture is creamy.
6. Once heated through, remove from heat.
