Spiced Seekh Kebabs with Fragrant Indian Herbs

In a large mixing bowl, combine ground lamb, onion, garlic, ginger, cilantro, mint, green chili, cumin, coriander, garam masala, and salt. Mix well until all ingredients are evenly incorporated.
Preheat grill to medium-high heat.
Divide the mixture into equal portions and shape each portion into long, thin sausage-like shapes around skewers.
Brush the kebabs lightly with vegetable oil.
Grill the kebabs for 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
Serve hot with mint chutney, naan, and a side of salad.
