Mom’s Picadillo con Papa

1. Warm up your kitchen by preheating 1/8 to 1/4 cup of olive oil in a nonstick pan over medium heat. Let's make those potatoes dance! Add them in and cook until browned and crispy in most spots. A little tip: cover your potatoes while they cook for a quicker cook time. Once done, transfer them to a plate lined with paper towels to drain, then set aside.
2. Now, let's bring in the star of the show - the ground beef! To the same skillet, add beef and season with 1 teaspoon each of salt, garlic powder, and cumin, and 1/2 teaspoon of pepper. Cook for 8 to 10 minutes until it's beautifully browned.
3. Let's add some more flavor! Stir in the garlic and onion, and cook for another 2 to 3 minutes. Meanwhile, blend tomatoes, serranos, 1/4 cup water, salt, and oregano until smooth. Pour this flavorful mixture into the picadillo, stirring well. Let it simmer and taste for salt.
4. Finally, fold in the potatoes and stir until well mixed. Taste for seasonings and continue cooking at a low simmer until the sauce thickens and reduces for about 7-10 minutes. Remove from heat and get ready to serve up a storm!
