Lemon Hand Pies

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness.
Using a round cutter (about 4 inches in diameter), cut out circles of dough. Re-roll the scraps as needed.
Place a small spoonful of the cooled lemon filling in the center of each dough circle.
Brush the edges of the dough with the beaten egg wash.
Fold the dough over the filling to create a half-moon shape and press the edges with a fork to seal.
Place the assembled hand pies on the prepared baking sheet.
Bake the Hand Pies:
Brush the tops of the hand pies with the remaining egg wash.
Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown.
Serve:
Allow the hand pies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Dust with powdered sugar before serving.
