1. In a bowl, soak the catfish fillets in buttermilk for about 30 minutes.
2. In another bowl, mix cornmeal, flour, paprika, cayenne pepper, garlic powder, salt, and pepper.
3. Remove catfish from buttermilk and coat each fillet in the flour mixture.
4. Heat oil in a large skillet over medium heat. Once hot, carefully place fillets in the oil.
5. Fry catfish for 4-5 minutes on each side or until golden brown and cooked through.
6. In a small saucepan, heat honey and hot sauce together until warm. Adjust the level of heat according to your taste.
7. Drizzle the hot honey sauce over the crispy catfish fillets.
8. Serve with lemon wedges on the side.
