Authentic Filipino Lumpia - Eggrolls

Combine all filling ingredients in a bowl. Mix well. Refrigerate for at least 1 hr or overnight for full flavor.
Scoop around 1 tablespoon of filling and place over a piece of lumpia wrapper. Fold lower end. Then, Fold both sides of the wrapper. Fold the bottom. Brush with water or egg-wash on the top end of the wrapper. Roll-up until completely wrapped. Repeat until done.
Heat oil in a cooking pan. Deep fry in low- medium heat until golden brown.
Serve with sweet and sour sauce. Share and enjoy with your family and friends.
