Zesty Shrimp and Rainbow Pepper Stir-Fry

In a large skillet or wok, heat the vegetable oil over medium-high heat.
Cook the Vegetables:
Add the sliced onions and bell peppers to the skillet.
Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
Remove the vegetables from the skillet and set aside.
Cook the Shrimp:
In the same skillet, add the marinated shrimp along with the marinade.
Stir-fry for 2-3 minutes until the shrimp are pink and cooked through.
Thicken the Sauce:
Push the shrimp to the side of the skillet.
Stir the cornstarch-water mixture and pour it into the center of the skillet.
Cook until the sauce thickens, stirring constantly.
