Strawberry Shortcake Ice Cream Bars

Whip heavy cream to stiff peaks. Fold in condensed milk, vanilla extract, and diced strawberries.
Freeze:
Pour the mixture into a pan, spread evenly, and freeze for at least 4 hours or until firm.
Coat:
Cut the ice cream into bars. Mix crushed shortbread cookies and freeze-dried strawberries. Roll the bars in the mixture to coat.
