RIBEYE STEAK WITH CARAMELIZED ONIONS

Step 1: Caramelize the Onions
In a large skillet, heat the butter and olive oil over medium heat.
Add the thinly sliced onions and cook, stirring occasionally, until they begin to soften, about 10 minutes.
Sprinkle the onions with brown sugar and continue to cook for another 10-15 minutes, stirring occasionally, until the onions are golden brown and caramelized. If using balsamic vinegar, add it during the last 5 minutes of cooking.
Season with salt and pepper to taste. Remove from the skillet and set aside.
Step 2: Cook the Ribeye Steaks
Season the ribeye steaks with salt and pepper.
In the same skillet, heat the olive oil over medium-high heat.
Add the steaks and cook for 3-4 minutes on each side for medium-rare, or to your desired doneness.
During the last minute of cooking, add the minced garlic and butter to the skillet. Spoon the melted butter and garlic over the steaks as they finish cooking. Add fresh rosemary sprigs for extra flavor, if desired.
Remove the steaks from the skillet and let them rest for a few minutes.
Step 3: Serve
Arrange the ribeye steaks on plates and top with the caramelized onions.
Serve with your favorite side dishes.
