Perfect Grilled Steak with Herb Butter

1️⃣ Make the Steak Seasoning: Coarsely grind all seasoning ingredients using a mortar and pestle or crush them in a heavy-duty Ziplock bag with a meat mallet.
2️⃣ Make the Herb Butter: Mix all herb butter ingredients in a bowl. Shape into a log using plastic wrap and refrigerate until firm.
3️⃣ Prep the Steaks: Trim excess fat from the steaks, pat dry, rub with oil, and generously apply the steak seasoning.
4️⃣ Grill the Steaks: Preheat 2/3 or 1/2 of the grill burners on high for 10-15 minutes until it reaches 500°F. Sear the steaks on the lit side for 1 1/2 minutes per side, then move to the unlit side and cook for 7-10 minutes until desired doneness.
5️⃣ Rest and Serve: Let the steaks rest for 5 minutes. Top with slices of herb butter before serving.
Steak Temperatures for Doneness:
Rare: 125°F
Medium Rare: 135°F
Medium: 145°F
Medium Well: 150°F
Well Done: 160°F
